Campfire Chicken Quesadilla Ingredients: 3-pound shredded chicken 5 ounces coarsely grated Monterey Jack cheese Salt and Pepper 4 (7-inch) flour tortillas Hot sauce (optional, for serving) Step 1 Cut 8 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 4 stacks. Step 2 Place a flour tortilla in the center of each foil stack. Dividing evenly, top one half of each tortilla with chicken and cheese and season with salt and pepper. Fold tortillas in half, then bring edges of foil together to enclose the quesadillas and crimp edges to seal. Step 3 Place foil packs side by side directly onto hot coals or grill and cook, rotating with tongs occasionally, about 5 minutes. Carefully remove 1 packet from heat and check if cheese is melted. If necessary, return pack to coals and continue to cook, 5–10 minutes more. Serve with hot sauce, if desired.

Just returned from a trip to Michigan State Park Metamora Hadley on site #191. Very beautiful campground/park with many trails, waterfront sites as well as wooded sites in the north loop. This park is electric only as is most Michigan state parks. We thoroughly enjoyed the tranquility and soothing sounds of nature that this park provided. IMG_7647.MOV IMG_7657.MOV

Cheesy Grilled Eggplant 1 to 2 TBS butter 1 eggplant, sliced 1/2 inch thick 2 tomatoes sliced 8 slices Swiss cheese Melt butter in a skillet over medium heat. Cook eggplant slices until tender and golden. Arrange eggplant on a 14” length of heavy duty foil reserving several slices for top. Layer with tomato and cheese slices; top with reserved eggplant slices. Wrap well. Grill over medium heat for 5 minutes or until hot and cheese is melted. These are so good! You can also grill the eggplant instead skillet cooking them until tender then arrange in foil.

We are level. We check with a bubble level as well. It’s the stabilization we are having trouble with.

We use stair covers as well. My dog had a hard time on the aluminum steps, much better with the mat covers on them.👍🏼

I think we are going to try these triangle Jack stands. We checked the hardware on the jacks and they are all tight. We are using scissor jacks but we have way to much motion, I don’t think it should move that much. We are also going to change our 4” tall blocks to the 7 or 8” so the stabilizers are less extended. Hopefully that will help. I need Dramamine…lol! This is why I’m not a boater.😬😂

We’re ok getting level it’s just not very stabile on the side to side motion. Even walking down the aisle of the Oliver we feel the motion. It’s most noticeable coming in and out the door. It seems because it’s on only 3 leveling point suspension is why we are rocking more then in our last camper. We just wonder if adding the triangle jacks might help or are we missing something? Perhaps it’s just a trait of Oliver II?🤷🏻♀️

Thank you. We really don’t want to add another “something” to carry. Those triangle jacks are what we were thinking that help. It might be something I just have to get use too.😏
